Or'esh: A Culinary Journey Through the Mediterranean

A new Mediterranean restaurant called Or’esh is set to open in Soho in early 2025. The restaurant is a collaboration between Eugene Remm, Tilman Fertitta, and Catch Hospitality Group, and will be their most ambitious project yet. The two-story, 75-seat space will be located at 450 West Broadway and will feature grilled dishes from the Levant, overseen by chef Nadav Greenberg, known for his work at Eyal Shani’s Michelin-starred restaurant Shmoné.
Or’esh will offer a departure from the team’s previous casual steakhouse concepts, focusing on in-season dishes inspired by Mediterranean traditions from various countries in the region. The menu will feature minimalist dishes cooked on a custom grill that allows for wood- and coal-fired cooking. Greenberg plans to use olive oils sourced from the region, process whole lamb in-house, and prepare meats fresh daily, with even the house-made pasta getting a turn on the grill.
The name Or’esh, meaning light and fire in Hebrew, reflects the restaurant’s culinary approach. Greenberg emphasizes simplicity, respect for ingredients, and a balance between familiarity and innovation in the dishes. The restaurant will have seating on the upper level, with a kitchen visible from a window on the lower level showcasing the grill. Greenberg also plans to introduce a chef’s table in the kitchen, offering a unique dining experience that is expected to be highly sought after once the restaurant opens.
