Horses at Churchill Downs may be known for their colorful races and betting opportunities, but behind the scenes, the focus is on managing the waste they produce. The stable manager, Steve Hargrave, oversees the removal process, which involves cleaning the stalls twice a day and transporting the manure to designated areas. The manure is then taken to mushroom farms, like Monterey Mushrooms in Tennessee, where it is composted and used as a base for mushroom growth. The mushrooms are later sold to various retailers, including Walmart and Costco. Some of the manure is even collected as souvenirs by employees, like DNA from the famous racehorse American Pharoah. Despite the unconventional nature of the process, it is an essential part of managing the waste generated by the horses at Churchill Downs.
